Champ is comfort food at its best
It is a classic pub style dish of mashed potatoes with lots of cream and butter with hints on green onions that make these mashed potatoes you don't need gravy on.

3 lb. potatoes, peeled and cut into 2-inch pieces or leave whole if using an                  Instant Pot
6 green onions, white and green portions, thinly sliced
8 Tbs. (1 stick) unsalted butter, melted
1 cup heavy cream
Salt and freshly ground pepper, to taste
6 Tbs. (3/4 stick) unsalted butter, melted
Directions:
Steamer or Pasta Pot Method: Pour 2 Cans or bottles of beer into the bottom pan of a steamer, or pasta pot. Set over medium heat and bring the beer to a simmer. Add the potatoes to the insert, Place the steamer insert inside and cover the pan. Steam until tender, about 25 to 45 minutes.
Instant Pot Method: Pour 1 can/bottle beer into pot. Place a lifting rack inside and place whole potatoes inside. Cover with lid, making sure venting is closed. Cook on Pressure cook for 23 minutes. Allow to slow vent for 10 minutes or quick vent before opening.

  1. Transfer the potatoes to a large bowl, add the green onions and mash with a handheld masher until the mixture is mostly smooth. Add the 8 Tbs. butter, then gradually add the cream, mashing until the potatoes are creamy. Season with salt and pepper.
